- 2 pounds of potatoes (Yukon Gold or red potatoes recommended)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 celery stalks, diced
- 1/2 red onion, finely chopped
- 3 hard-boiled eggs, chopped
- Salt and pepper to taste
- Fresh parsley, chopped for garnish (optional)
Instructions
- Wash and peel the potatoes, then cut them into bite-sized pieces.
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil and cook for about 10-15 minutes, or until potatoes are fork-tender. Drain and let cool.
- In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Once the potatoes are cooled, add them to the bowl along with the diced celery, chopped red onion, and hard-boiled eggs.
- Gently mix until everything is well coated with the dressing.
- Taste and adjust seasoning if necessary.
- Refrigerate for at least 1 hour before serving to let the flavors meld.
- Garnish with fresh parsley before serving.
