Ingredients

  • 2 pounds of potatoes (Yukon Gold or red potatoes recommended)
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 celery stalks, diced
  • 1/2 red onion, finely chopped
  • 3 hard-boiled eggs, chopped
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Wash and peel the potatoes, then cut them into bite-sized pieces.
  2. Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
  3. Bring to a boil and cook for about 10-15 minutes, or until potatoes are fork-tender. Drain and let cool.
  4. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  5. Once the potatoes are cooled, add them to the bowl along with the diced celery, chopped red onion, and hard-boiled eggs.
  6. Gently mix until everything is well coated with the dressing.
  7. Taste and adjust seasoning if necessary.
  8. Refrigerate for at least 1 hour before serving to let the flavors meld.
  9. Garnish with fresh parsley before serving.
