- 1 cup pumpkin puree
- 1/2 cup almond butter
- 1/3 cup maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp pumpkin pie spice
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with liners.
- In a bowl, mix pumpkin puree, almond butter, maple syrup, eggs, and vanilla.
- Add almond flour, baking powder, baking soda, and pumpkin pie spice. Stir well.
- Fold in chocolate chips.
- Scoop batter into muffin liners, filling 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Use unsweetened almond butter for a less sweet version.
- Substitute honey for maple syrup if needed.
