- 1 lb (450g) boneless, skinless chicken breast, cubed
- 1 cup diced pineapple (fresh or canned)
- 1 cup white rice, uncooked
- 2 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp ginger, minced
- 1 garlic clove, minced
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup chopped green onions (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until lightly browned, about 5 minutes.
- Stir in garlic, ginger, and pineapple. Cook for 2 minutes.
- Add rice, chicken broth, soy sauce, black pepper, and salt. Stir well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until rice is tender.
- Remove from heat, let stand for 5 minutes, then fluff with a fork.
- Garnish with green onions if desired and serve.
Notes
- Use brown rice for a healthier option (adjust cooking time as needed).
- For extra flavor, add a dash of chili flakes or a splash of lime juice.
- Leftovers can be stored in the fridge for up to 3 days.
