Description
This festive Patriotic Jell-O Poke Cake is perfect for celebrating Independence Day or any summer gathering. It’s a deliciously moist vanilla cake infused with vibrant layers of Jell-O in red, white, and blue.

- 1 box white cake mix
- 1 cup water
- 1/3 cup vegetable oil
- 3 large eggs
- 1 (3 oz) box strawberry Jell-O
- 1 (3 oz) box blue raspberry Jell-O
- 2 cups boiling water, divided
- 1 cup cold water
- 1 (8 oz) container whipped topping (like Cool Whip)
- Fresh berries for garnish (strawberries and blueberries)
Instructions
- Preheat the oven according to the instructions on the cake mix box and prepare a 9×13 inch baking pan.
- In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Mix until well combined.
- Pour the batter into the prepared baking pan and bake according to package directions or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and let it cool for about 10 minutes. Use a fork to poke holes all over the top of the cake.
- In a separate bowl, dissolve the strawberry Jell-O in 1 cup of boiling water, then stir in 1/2 cup of cold water. Pour the strawberry Jell-O over the first half of the cake, making sure to fill the holes.
- In another bowl, dissolve the blue raspberry Jell-O in the remaining 1 cup of boiling water, then stir in the remaining 1/2 cup of cold water. Pour the blue raspberry Jell-O over the second half of the cake, filling the holes as well.
- Refrigerate the cake for at least 4 hours, preferably overnight, to allow the Jell-O to set.
- Once set, top the cake with whipped topping and garnish with fresh berries before serving.
