- 1 pound pasta, such as rotini or penne
- 1 pound cooked chicken, shredded or diced
- 1 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Optional: Add other vegetables such as bell peppers, cucumbers, or tomatoes
Instructions
- Cook the pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, chicken, mayonnaise, Greek yogurt, celery, red onion, parsley, lemon juice, and Dijon mustard.
- Season with salt and pepper to taste.
- Stir well to combine.
- Cover and refrigerate for at least 30 minutes before serving.
- Optional: Garnish with fresh parsley before serving.
