Ingredients

  • 1 pound pasta, such as rotini or penne
  • 1 pound cooked chicken, shredded or diced
  • 1 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: Add other vegetables such as bell peppers, cucumbers, or tomatoes

Instructions

  1. Cook the pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, chicken, mayonnaise, Greek yogurt, celery, red onion, parsley, lemon juice, and Dijon mustard.
  3. Season with salt and pepper to taste.
  4. Stir well to combine.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Optional: Garnish with fresh parsley before serving.
