A refreshing pasta salad with a creamy yogurt dressing, perfect for a light meal or side dish.
Ingredients

- 2 cups cooked pasta
- 1 cup plain yogurt
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, mix yogurt, lemon juice, olive oil, salt, and black pepper.
- Add the cooled pasta, cucumber, bell pepper, red onion, and parsley to the bowl.
- Toss everything together until well coated with the dressing.
- Chill in the refrigerator for at least 30 minutes before serving.

- Use whole wheat pasta for a healthier option.
- Add cherry tomatoes or olives for extra flavor.
