- 2 boneless, skinless chicken breasts
- 1 cup grated parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1/2 cup mayonnaise
- 1/4 cup fresh basil, chopped
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a shallow bowl, mix parmesan cheese and breadcrumbs.
- Dip each chicken breast in the beaten egg, then coat with the parmesan mixture.
- Heat olive oil in a skillet over medium heat. Cook chicken for 3-4 minutes per side until golden brown.
- Transfer chicken to a baking sheet and bake for 10-12 minutes until fully cooked.
- For the aioli, mix mayonnaise, basil, garlic, and lemon juice. Season with salt and pepper.
- Serve chicken hot with a drizzle of basil aioli.
Notes
- Use freshly grated parmesan for the best texture.
- Adjust garlic in the aioli to your taste.
- Chicken is done when internal temperature reaches 165°F (74°C).
