- 1 1/2 cups rolled oats
- 1 cup milk (or almond milk)
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup mashed banana (about 1 medium banana)
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup chopped nuts (walnuts or almonds, optional)
- 1/2 cup dried fruits (raisins or cranberries, optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with non-stick spray.
- In a large bowl, combine the rolled oats and milk. Let it sit for about 10 minutes to allow the oats to absorb the milk.
- Add the applesauce, honey or maple syrup, mashed banana, and vanilla extract to the oat mixture. Stir until well combined.
- In a separate bowl, mix together the baking powder, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients and stir until just combined. If using, fold in the chopped nuts and dried fruits.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For added flavor, consider adding chocolate chips or spices like nutmeg.
- These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
