- 1 (14 oz) can sweetened condensed milk
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust. Refrigerate while preparing the filling.
- In a large bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract until smooth.
- In another bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
- Gently fold the whipped cream into the lemon mixture until combined.
- Pour the lemon filling into the prepared crust and smooth the top.
- Refrigerate for at least 4 hours, or until set.
- Slice and serve chilled, garnished with additional lemon zest or whipped cream if desired.
Notes
- For a sweeter pie, adjust the amount of sugar in the filling to taste.
- Feel free to use a store-bought graham cracker crust for a quicker option.
