- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Whipped cream for topping (optional)
- Lemon slices for garnish (optional)
Instructions
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Set aside.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add powdered sugar, sour cream, lemon juice, lemon zest, and vanilla extract. Mix until fully combined and creamy.
- Pour the lemon filling over the crust in the springform pan, spreading it evenly.
- Refrigerate for at least 4 hours or until set.
- Once set, remove from the springform pan and top with whipped cream and lemon slices before serving.
Notes
- For a stronger lemon flavor, increase the lemon juice and zest.
- This cheesecake can be made a day in advance for a convenient dessert option.
