These no bake avalanche cookies are a delicious treat made with a combination of chocolate, peanut butter, and rice cereal, all mixed together and set in the refrigerator for an easy dessert.

- 2 cups rice cereal
- 1 cup creamy peanut butter
- 1 cup chocolate chips
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup chocolate drizzle (for topping)
Instructions
- In a large mixing bowl, combine the rice cereal and powdered sugar. Mix well.
- In a saucepan over low heat, melt the peanut butter and chocolate chips together, stirring until smooth.
- Remove from heat and stir in the vanilla extract.
- Pour the melted mixture over the rice cereal and powdered sugar. Stir until well combined.
- Gently fold in the mini marshmallows.
- Line an 8×8 inch baking dish with parchment paper. Press the mixture evenly into the dish.
- Drizzle the melted chocolate on top of the mixture.
- Refrigerate for at least 2 hours until set.
- Once set, cut into squares and enjoy!
Notes
- Store cookies in an airtight container in the refrigerator for up to one week.
