- 1 cup butter
- 2 cups sugar
- 4 eggs
- 1 tsp vanilla extract
- 2.5 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/2 cup cocoa powder
- 1 cup chopped pecans
- 1/2 cup strong brewed coffee
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
- In a separate bowl, mix flour, baking soda, salt, and cocoa powder.
- Alternately add dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
- Fold in chopped pecans and coffee.
- Pour batter into prepared pan and bake for 35-40 minutes, or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For extra richness, dust with powdered sugar or drizzle with chocolate glaze.
