A simple one-pot recipe inspired by Nando’s Portuguese Chicken and Rice. This dish combines tender chicken with flavorful rice for a complete meal.

- 2 chicken breasts, diced
- 1 cup basmati rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups chicken broth
- 1 tbsp lemon juice
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5 minutes.
- Add onion, garlic, and bell pepper. Cook for 3 minutes.
- Stir in rice, paprika, turmeric, cumin, salt, and black pepper.
- Pour in chicken broth and lemon juice. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes until rice is cooked.
- Garnish with fresh parsley before serving.

- Use chicken thighs for extra flavor.
- Let the dish rest for 5 minutes before serving.
