Description

Ingredients

  • 200g mixed dried fruit
  • 100g butter, softened
  • 100g brown sugar
  • 2 eggs
  • 100g self-raising flour
  • 1 tsp mixed spice
  • 50g chopped nuts (optional)
  • 2 tbsp brandy or orange juice

Instructions

  1. Preheat your oven to 160°C (140°C fan). Grease mini cake tins or muffin molds.
  2. Soak the dried fruit in brandy or orange juice for 30 minutes.
  3. Cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time.
  5. Fold in the flour, mixed spice, and soaked fruit (including any liquid).
  6. Divide the mixture into the prepared tins.
  7. Bake for 20-25 minutes or until a skewer comes out clean.
  8. Cool in the tins for 10 minutes, then transfer to a wire rack.
