- 200g mixed dried fruit
- 100g butter, softened
- 100g brown sugar
- 2 eggs
- 100g self-raising flour
- 1 tsp mixed spice
- 50g chopped nuts (optional)
- 2 tbsp brandy or orange juice
Instructions
- Preheat your oven to 160°C (140°C fan). Grease mini cake tins or muffin molds.
- Soak the dried fruit in brandy or orange juice for 30 minutes.
- Cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time.
- Fold in the flour, mixed spice, and soaked fruit (including any liquid).
- Divide the mixture into the prepared tins.
- Bake for 20-25 minutes or until a skewer comes out clean.
- Cool in the tins for 10 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to a week.
- Wrap in festive paper for gifting.
