A delicious and hearty Mexican breakfast featuring huevos rancheros, refried beans, and fresh salsa.
Ingredients

- 4 large eggs
- 1 cup refried beans
- 2 corn tortillas
- 1 cup salsa (fresh or store-bought)
- 1/2 cup crumbled queso fresco
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- In a skillet, heat the olive oil over medium heat.
- Add the tortillas one at a time, cooking for about 30 seconds on each side until slightly crispy. Remove and set aside.
- In the same skillet, crack the eggs and cook to your desired doneness (sunny-side up or over-easy). Season with salt and pepper.
- To serve, spread a layer of refried beans on each tortilla, top with an egg, and spoon over salsa.
- Garnish with crumbled queso fresco, avocado slices, and cilantro.
Notes
- For extra flavor, add diced jalapeños to the salsa.
- Serve with a side of fresh fruit for a complete meal.
