Description

Ingredients

  • 4 large eggs
  • 1 cup refried beans
  • 2 corn tortillas
  • 1 cup salsa (fresh or store-bought)
  • 1/2 cup crumbled queso fresco
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Add the tortillas one at a time, cooking for about 30 seconds on each side until slightly crispy. Remove and set aside.
  3. In the same skillet, crack the eggs and cook to your desired doneness (sunny-side up or over-easy). Season with salt and pepper.
  4. To serve, spread a layer of refried beans on each tortilla, top with an egg, and spoon over salsa.
  5. Garnish with crumbled queso fresco, avocado slices, and cilantro.

Notes

  • For extra flavor, add diced jalapeños to the salsa.
