Description

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 1/4 cup fresh basil, chopped
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes, basil, oregano, and red pepper flakes. Simmer for 10 minutes.
  5. Season cod fillets with salt and black pepper, then place them in the skillet.
  6. Cover and cook for 8-10 minutes until the cod flakes easily.
  7. Serve hot with a sprinkle of fresh basil.
