- 4 white fish fillets (such as cod or halibut)
- 2 tbsp olive oil
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup pitted Kalamata olives
- 1/2 cup cherry tomatoes, halved
Instructions
- Preheat oven to 375°F (190°C).
- Place fish fillets in a baking dish.
- Drizzle with olive oil and rub minced garlic over the fish.
- Sprinkle with oregano, paprika, salt, and black pepper.
- Top with lemon slices, olives, and cherry tomatoes.
- Bake for 15-20 minutes or until fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
