- 2 boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 6-7 minutes per side. Remove and slice.
- In the same skillet, add garlic and red pepper flakes. Cook for 1 minute until fragrant.
- Add sun-dried tomatoes and heavy cream. Simmer for 3-4 minutes.
- Stir in Parmesan cheese until melted and sauce thickens.
- Add cooked pasta and sliced chicken to the sauce. Toss to coat evenly.
- Serve immediately with extra Parmesan if desired.
Notes
- You can use chicken thighs instead of breasts for more flavor.
- Add spinach or mushrooms for extra vegetables.
- Leftovers keep well in the fridge for up to 3 days.
