Refreshing and creamy mango coconut popsicles made with fresh mangoes and coconut milk, perfect for a hot summer day.
Ingredients

- 2 ripe mangoes (peeled and diced)
- 1 cup coconut milk (full-fat for creaminess)
- 2 tablespoons honey or maple syrup (adjust based on sweetness preference)
- 1 tablespoon lime juice (freshly squeezed)
- 1/4 cup coconut flakes (optional, for added texture)
Instructions
- In a blender, combine the diced mangoes, coconut milk, honey or maple syrup, and lime juice.
- Blend until smooth and creamy.
- If using, stir in the coconut flakes.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks into the molds and freeze for at least 4-6 hours, or until completely frozen.
- To remove popsicles, run warm water over the outside of the molds for a few seconds.

Notes
- For a tropical twist, add a splash of pineapple juice.
- These popsicles can be stored in the freezer for up to 2 months.
