Description
This make-ahead breakfast casserole is perfect for busy mornings! Packed with eggs, cheese, and your favorite breakfast meats, it can be prepared the night before and baked fresh in the morning.

- 12 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup cooked sausage, crumbled
- 1 cup diced bell peppers
- 1 cup diced onions
- 6 cups cubed bread (preferably stale)
- 1 tablespoon olive oil (for greasing the dish)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish with olive oil.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Add the cheese, sausage, bell peppers, onions, and cubed bread to the egg mixture. Stir until evenly combined.
- Pour the mixture into the prepared baking dish. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
- When ready to bake, remove the casserole from the refrigerator and let it sit at room temperature for 30 minutes.
- Bake in the preheated oven for 45-50 minutes, or until the center is set and the top is golden brown.
- Let cool for a few minutes before slicing and serving.
