Ingredients

  • 1 cup unsweetened almond milk
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup Greek yogurt
  • 1 tablespoon cornstarch
  • A pinch of salt

Instructions

  1. In a medium saucepan, combine almond milk, cocoa powder, honey or maple syrup, vanilla extract, and salt. Whisk until smooth.
  2. Heat the mixture over medium heat, stirring constantly until it begins to simmer.
  3. In a small bowl, mix cornstarch with a splash of cold water to create a slurry. Stir this slurry into the chocolate mixture.
  4. Continue to cook, stirring constantly, until the mixture thickens, about 2-3 minutes.
  5. Remove from heat and let it cool slightly. Stir in the Greek yogurt until fully combined.
  6. Pour the mousse into serving cups and refrigerate for at least 1 hour to set.
  7. Serve chilled and enjoy your guilt-free dessert!

Notes
