- 1 cup unsweetened almond milk
- 1/2 cup unsweetened cocoa powder
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup Greek yogurt
- 1 tablespoon cornstarch
- A pinch of salt
Instructions
- In a medium saucepan, combine almond milk, cocoa powder, honey or maple syrup, vanilla extract, and salt. Whisk until smooth.
- Heat the mixture over medium heat, stirring constantly until it begins to simmer.
- In a small bowl, mix cornstarch with a splash of cold water to create a slurry. Stir this slurry into the chocolate mixture.
- Continue to cook, stirring constantly, until the mixture thickens, about 2-3 minutes.
- Remove from heat and let it cool slightly. Stir in the Greek yogurt until fully combined.
- Pour the mousse into serving cups and refrigerate for at least 1 hour to set.
- Serve chilled and enjoy your guilt-free dessert!
Notes
- Feel free to add a pinch of cinnamon or a splash of coffee for extra flavor.
