These Loaded Breakfast Egg Muffins are the perfect make-ahead breakfast option for a crowd! Packed with protein and veggies, they’re easy to customize and great for meal prep.

- 12 large eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1 cup diced vegetables (bell peppers, spinach, onions, etc.)
- 1 cup cooked and crumbled sausage or bacon (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Cooking spray or muffin liners
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or line it with muffin liners.
- In a large bowl, whisk together the eggs and milk until well combined.
- Stir in the cheese, diced vegetables, cooked sausage or bacon (if using), salt, pepper, garlic powder, and onion powder.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 18-20 minutes or until the muffins are puffed and golden brown.
- Remove from the oven and let them cool in the pan for a few minutes before transferring to a wire rack.
- Serve warm or store in an airtight container in the refrigerator for up to 5 days.
Notes
- Feel free to customize these muffins with your favorite ingredients like different cheeses, vegetables, or meats.
- These muffins can also be frozen. To reheat, simply microwave for about 30-60 seconds until heated through.
