  • 1 cup boiling water
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (as needed)
  • Yellow and orange food coloring
  • Edible gold glitter (for decoration)
  • Leo-themed cake topper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes.
  4. Stir in boiling water until well combined (the batter will be thin). Pour evenly into prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.
  6. For the buttercream frosting, beat softened butter in a bowl until creamy. Gradually add powdered sugar and cocoa powder, beating until well combined.
  7. Add vanilla extract and milk, mixing until you reach your desired consistency.
  8. Divide the frosting into two bowls. Tint one bowl with yellow food coloring and the other with orange food coloring.
  9. Place one cake layer on a serving plate. Spread a layer of yellow frosting on top, then place the second layer on top.
  10. Frost the top and sides of the cake with orange frosting, smoothing it out as desired.
  11. Decorate the cake with edible gold glitter and add a Leo-themed cake topper if using.
