Description
A simple and healthy dish featuring lemon herb salmon with roasted vegetables.
Ingredients
Scale
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Coat salmon fillets with the mixture and set aside.
- Toss vegetables with remaining olive oil, salt, and pepper.
- Place salmon and vegetables on a baking sheet.
- Roast for 15-20 minutes until salmon is cooked and vegetables are tender.
- Serve immediately.

- Use fresh herbs if available.
- Adjust cooking time based on salmon thickness.
- Store leftovers in an airtight container for up to 2 days.
