Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 lemons, sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes.
  3. Add asparagus to the tray and roast for another 5 minutes.
  4. Place salmon fillets on the tray. Drizzle with remaining olive oil.
  5. Sprinkle minced garlic, oregano, and lemon slices over the salmon.
  6. Bake for 12-15 minutes until salmon is cooked through.
  7. Serve immediately.
