Ingredients

  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix garlic, lemon juice, lemon zest, olive oil, salt, pepper, and oregano.
  3. Coat chicken breasts with the marinade and let sit for 15 minutes.
  4. Toss vegetables with remaining marinade.
  5. Place chicken and vegetables on a baking sheet.
  6. Roast for 25–30 minutes until chicken is cooked through.
  7. Serve warm.
