- 4 boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix garlic, lemon juice, lemon zest, olive oil, salt, pepper, and oregano.
- Coat chicken breasts with the marinade and let sit for 15 minutes.
- Toss vegetables with remaining marinade.
- Place chicken and vegetables on a baking sheet.
- Roast for 25–30 minutes until chicken is cooked through.
- Serve warm.
