- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried dill
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 bunch asparagus, trimmed
- 1/2 cup crumbled feta cheese
- 2 tbsp Greek yogurt
- 1 tsp lemon zest
Instructions
- Preheat oven to 400°F (200°C).
- Mix olive oil, lemon juice, dill, salt, and pepper in a bowl.
- Coat chicken breasts with the mixture and place on a baking sheet.
- Toss asparagus with a drizzle of olive oil and place on the same sheet.
- Bake for 20-25 minutes until chicken is cooked through and asparagus is tender.
- Blend feta, Greek yogurt, and lemon zest until smooth to make whipped feta.
- Serve chicken and asparagus with a dollop of whipped feta.
Notes
- Use fresh dill if available for a stronger flavor.
- Check chicken internal temperature reaches 165°F (74°C).
