Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the flour, powdered sugar, and softened butter. Mix until crumbly.
- Press the mixture into the bottom of a greased 9×9 inch baking dish to form the crust.
- Bake the crust for 15-20 minutes, or until lightly golden.
- In another bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, lime zest, and salt until well combined.
- Pour the lime mixture over the baked crust, spreading it evenly.
- Return to the oven and bake for an additional 15-20 minutes, until the filling is set.
- Remove from the oven and allow to cool to room temperature before refrigerating for at least 2 hours.
- Cut into squares and serve chilled, garnished with additional lime zest if desired.
