Description

This Instant Pot beef stew is a comforting and hearty dish, packed with tender chunks of beef, potatoes, carrots, and rich flavors. It’s a perfect meal for any day of the week and can be made in under an hour.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Turn on the Instant Pot and select the ‘Sauté’ function. Add olive oil and heat until shimmering.
  2. Add the beef cubes in batches, browning them on all sides. Remove the beef and set aside.
  3. In the same pot, add chopped onion and garlic. Sauté until the onion is translucent.
  4. Add the beef back into the pot along with beef broth, potatoes, carrots, tomato paste, thyme, rosemary, salt, and pepper.
  5. Close the lid, set the pressure valve to sealing, and select the ‘Manual’ or ‘Pressure Cook’ function. Cook on high pressure for 35 minutes.
  6. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  7. If you prefer a thicker stew, mix cornstarch and water in a small bowl to create a slurry. Stir this into the stew and select the ‘Sauté’ function again. Cook for a few minutes until thickened.
  8. Serve hot and enjoy your Instant Pot beef stew!

Notes

  • For added flavor, you can add a splash of red wine to the stew before cooking.
  • Feel free to add other vegetables like peas or green beans for extra nutrition.
