- 2 teaspoons baking powder

- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup fresh huckleberries
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, egg, and melted butter. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in huckleberries gently.
- Heat a non-stick skillet or griddle over medium heat and grease lightly with butter or oil.
- Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip and cook for another 2-3 minutes until golden brown.
- Serve warm with maple syrup or your favorite toppings.
