- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil (optional)
- Extra flour for dusting
Instructions
- Place the flour on a clean surface or in a large bowl. Make a well in the center and add the eggs, salt, and olive oil.
- Using a fork, beat the eggs gently, incorporating the flour starting from the inner rim of the well. Continue until the dough begins to come together.
- Knead the dough by hand for about 8-10 minutes until it is smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.
- After resting, divide the dough into four pieces. Roll out each piece with a pasta machine or a rolling pin until thin.
- Cut the rolled-out dough into your desired pasta shape (e.g., fettuccine, tagliatelle, etc.). Dust with flour to prevent sticking.
- Cook the pasta in a large pot of boiling salted water for 2-3 minutes or until al dente. Drain and serve with your favorite sauce.
Notes
- If the dough is too sticky, add a little more flour as needed.
- You can store any unused dough in the refrigerator for up to 2 days or freeze it for longer storage.
