Instructions

  1. Place the flour on a clean surface or in a large bowl. Make a well in the center and add the eggs, salt, and olive oil.
  2. Using a fork, beat the eggs gently, incorporating the flour starting from the inner rim of the well. Continue until the dough begins to come together.
  3. Knead the dough by hand for about 8-10 minutes until it is smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.
  4. After resting, divide the dough into four pieces. Roll out each piece with a pasta machine or a rolling pin until thin.
  5. Cut the rolled-out dough into your desired pasta shape (e.g., fettuccine, tagliatelle, etc.). Dust with flour to prevent sticking.
  6. Cook the pasta in a large pot of boiling salted water for 2-3 minutes or until al dente. Drain and serve with your favorite sauce.

Notes

  • If the dough is too sticky, add a little more flour as needed.
  • You can store any unused dough in the refrigerator for up to 2 days or freeze it for longer storage.
