A delicious and easy recipe for homemade fried rice, perfect for using up leftover rice and vegetables.
Ingredients

- 2 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn, etc.)
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil and mixed vegetables. Stir-fry for 2-3 minutes until heated through.
- Add the cooked rice, soy sauce, sesame oil, and scrambled eggs to the skillet. Stir well to combine all ingredients.
- Cook for an additional 3-5 minutes, stirring frequently, until everything is heated through.
- Stir in the chopped green onions and season with salt and pepper to taste.
- Serve hot and enjoy your homemade fried rice!
Notes
- For added protein, you can include cooked chicken, shrimp, or tofu.
- Feel free to customize with your favorite vegetables.
- Using day-old rice helps prevent the fried rice from becoming mushy.
