Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil and mixed vegetables. Stir-fry for 2-3 minutes until heated through.
  4. Add the cooked rice, soy sauce, sesame oil, and scrambled eggs to the skillet. Stir well to combine all ingredients.
  5. Cook for an additional 3-5 minutes, stirring frequently, until everything is heated through.
  6. Stir in the chopped green onions and season with salt and pepper to taste.
