- 4 boneless, skinless chicken breasts
- 4 large potatoes, cut into wedges
- 3 tbsp olive oil
- 2 tbsp honey
- 2 tbsp Dijon mustard
- 1 tbsp whole grain mustard
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potato wedges with 2 tbsp olive oil, 1/2 tsp salt, and 1/2 tsp black pepper. Spread on a baking sheet.
- Bake potatoes for 25 minutes, flipping halfway.
- In a bowl, mix honey, Dijon mustard, whole grain mustard, and garlic powder.
- Coat chicken breasts with the honey mustard mixture.
- Heat 1 tbsp olive oil in a pan over medium heat. Cook chicken for 5-6 minutes per side until golden and cooked through.
- Serve chicken with crispy potato wedges.
Notes
- For extra crispiness, broil potato wedges for 2-3 minutes at the end.
- Substitute chicken thighs for a juicier option.
- Adjust mustard and honey ratios to taste.
