- 2 pounds baby potatoes, halved
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Once the potatoes are cool, add them to the bowl with the dressing and toss to coat.
- Gently fold in the fresh parsley, dill, and green onions.
- Chill the potato salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- Feel free to add other herbs like chives or basil for extra flavor.
- This salad can be made a day in advance and stored in the refrigerator.
