Ingredients

  • 1 pound pasta (such as spaghetti, linguine, or penne)
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved pasta water
  • Salt and black pepper to taste
  • Optional: Red pepper flakes for heat

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add asparagus to the skillet and cook until tender-crisp, about 5-7 minutes. Season with salt and pepper.
  4. Reserve about 1/4 cup of pasta water before draining the pasta.
  5. Add the drained pasta to the skillet with the asparagus. Toss to combine.
  6. Add Parmesan cheese and reserved pasta water to the skillet. Toss until the sauce is creamy and coats the pasta. Add more pasta water if needed to adjust the consistency.
  7. Season with salt, pepper, and red pepper flakes (if using) to taste.
  8. Serve immediately, garnished with additional Parmesan cheese.

Notes

  • For a richer flavor, add a squeeze of lemon juice to the pasta before serving.
  • You can also add other vegetables to this dish, such as peas, mushrooms, or cherry tomatoes.
  • If you don’t have Parmesan cheese, you can substitute it with Pecorino Romano or another hard cheese.
  • To make it vegan, use vegan parmesan cheese and ensure your pasta is egg-free.
