A delicious and healthy pasta dish with tender chicken, garlic, and parmesan cheese.
Ingredients

- 2 boneless, skinless chicken breasts
- 8 oz whole wheat pasta
- 3 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 cups fresh spinach
- 1/2 cup low-sodium chicken broth
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken with salt and pepper. Heat 1 tbsp olive oil in a pan over medium heat. Cook chicken for 5-6 minutes per side until fully cooked. Remove and slice.
- In the same pan, add remaining oil and sauté garlic for 30 seconds until fragrant.
- Add spinach and cook until wilted, about 2 minutes.
- Pour in chicken broth and stir, scraping up browned bits from the pan.
- Add cooked pasta, sliced chicken, and parmesan cheese. Toss to combine and serve.
Notes
- Use gluten-free pasta if needed.
- Add extra vegetables like cherry tomatoes or mushrooms for variety.
- Adjust red pepper flakes for more or less spice.
