- 1 lb lean ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and bell pepper, and sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the lean ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Once the beef is cooked, drain any excess fat.
- Stir in black beans, diced tomatoes, chili powder, cumin, salt, and pepper.
- Bring the mixture to a simmer and let cook for 10-15 minutes to allow flavors to meld.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
