- 4 large hatch chili peppers
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels (fresh or canned)
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the hatch chili peppers and remove the seeds carefully.
- In a mixing bowl, combine the cooked rice, shredded cheese, black beans, corn, cumin, garlic powder, salt, and pepper.
- Stuff each chili pepper with the rice mixture and place them in a baking dish.
- Drizzle olive oil over the stuffed peppers.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.
- Garnish with fresh cilantro before serving.
