Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Add minced garlic and ginger, and cook for an additional minute until fragrant.
- Stir in the mixed vegetables and soy sauce, cooking until the vegetables are tender but still crisp, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot over cooked brown rice or quinoa.
