Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper. Sauté until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking up the meat with a spoon, about 5-7 minutes.
  5. Drain excess fat if necessary.
  6. Stir in the diced tomatoes, black beans, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5-10 minutes until heated through.
  7. Serve over cooked rice or quinoa and garnish with fresh cilantro if desired.
