- 1 lb ground beef
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Cooked rice or quinoa for serving
- Chopped fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper. Sauté until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking up the meat with a spoon, about 5-7 minutes.
- Drain excess fat if necessary.
- Stir in the diced tomatoes, black beans, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5-10 minutes until heated through.
- Serve over cooked rice or quinoa and garnish with fresh cilantro if desired.
