Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is no longer pink. Drain excess fat.
  3. Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 5 minutes until heated through.
  4. Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch baking dish.
  5. To assemble the enchiladas, place a generous amount of the beef mixture in the center of each tortilla, sprinkle with cheese, then roll them up and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top of the rolled enchiladas and sprinkle with the remaining cheese.
  7. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Garnish with fresh cilantro if desired. Serve warm.
