Delicious and hearty ground beef enchiladas topped with enchilada sauce and cheese, perfect for a family dinner.

- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is no longer pink. Drain excess fat.
- Stir in the black beans, corn, cumin, chili powder, salt, and pepper. Cook for another 5 minutes until heated through.
- Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch baking dish.
- To assemble the enchiladas, place a generous amount of the beef mixture in the center of each tortilla, sprinkle with cheese, then roll them up and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the rolled enchiladas and sprinkle with the remaining cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro if desired. Serve warm.
