- 1 pound ground beef
- 1 cup long-grain white rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Add ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain excess fat if necessary.
- Stir in rice, diced tomatoes, beef broth, paprika, cumin, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes. Fluff rice with a fork and garnish with fresh parsley if desired.
- Serve warm and enjoy your meal!
