  • 1 cup long-grain white rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add ground beef to the skillet. Cook until browned, breaking it up with a spoon, about 6-8 minutes. Drain excess fat if necessary.
  4. Stir in rice, diced tomatoes, beef broth, paprika, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender and has absorbed the liquid.
  6. Remove from heat and let it sit covered for 5 minutes. Fluff rice with a fork and garnish with fresh parsley if desired.
  7. Serve warm and enjoy your meal!
