- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 4 cups cooked rice or quinoa
- 1 avocado, sliced
- 1 cup salsa
- 1/2 cup shredded cheese (optional)
- Fresh cilantro for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, salt, and pepper.
- Rub the mixture all over the flank steak and let it marinate for at least 15 minutes.
- Grill the steak for about 5-7 minutes on each side, or until it reaches your desired level of doneness.
- Remove the steak from the grill and let it rest for 5 minutes before slicing it against the grain.
- While the steak is resting, grill the sliced bell peppers and onions for about 4-5 minutes until they are tender.
- To assemble the bowls, start with a base of rice or quinoa, top with sliced grilled steak, grilled vegetables, avocado slices, salsa, and shredded cheese if desired.
- Garnish with fresh cilantro and serve immediately.
