Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 cup rice
  • 2 cups water
  • Fresh parsley for garnish (optional)

Instructions

  1. In a bowl, combine olive oil, minced garlic, paprika, salt, black pepper, and lemon juice. Mix well.
  2. Add the shrimp to the marinade and toss to coat. Let it marinate for at least 15 minutes.
  3. While the shrimp is marinating, rinse the rice under cold water until the water runs clear.
  4. In a saucepan, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt. Lower the heat, cover, and simmer for 18-20 minutes until rice is cooked and water is absorbed.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer.
  7. Grill the shrimp skewers for 2-3 minutes on each side, or until they are opaque and cooked through.
  8. Serve the grilled shrimp skewers over a bed of rice. Garnish with fresh parsley if desired.

Notes

  • You can soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Feel free to add vegetables like bell peppers or zucchini to the skewers for extra flavor and nutrition.
