Delicious and flavorful grilled shrimp skewers served with a side of fluffy rice, perfect for summer barbecues.

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 cup rice
- 2 cups water
- Fresh parsley for garnish (optional)
Instructions
- In a bowl, combine olive oil, minced garlic, paprika, salt, black pepper, and lemon juice. Mix well.
- Add the shrimp to the marinade and toss to coat. Let it marinate for at least 15 minutes.
- While the shrimp is marinating, rinse the rice under cold water until the water runs clear.
- In a saucepan, bring 2 cups of water to a boil. Add the rinsed rice and a pinch of salt. Lower the heat, cover, and simmer for 18-20 minutes until rice is cooked and water is absorbed.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer.
- Grill the shrimp skewers for 2-3 minutes on each side, or until they are opaque and cooked through.
- Serve the grilled shrimp skewers over a bed of rice. Garnish with fresh parsley if desired.
Notes
- You can soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Feel free to add vegetables like bell peppers or zucchini to the skewers for extra flavor and nutrition.
