This Grilled Peach Burrata Salad is a delicious blend of sweet grilled peaches, creamy burrata cheese, and a rich honey balsamic dressing, perfect for summer gatherings.

- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 ounces burrata cheese
- 4 cups arugula or mixed greens
- 1/4 cup walnuts, toasted
- 1/4 cup honey
- 1/4 cup balsamic vinegar
- Fresh basil leaves, for garnish
Instructions
- Preheat the grill to medium-high heat.
- Brush the peach halves with olive oil and season with salt and pepper.
- Place the peaches cut-side down on the grill and grill for about 4-5 minutes, until grill marks appear and they are slightly softened. Remove from the grill and let cool.
- In a small saucepan, combine honey and balsamic vinegar. Bring to a simmer over medium heat and cook for 5 minutes, until slightly thickened. Remove from heat and let cool.
- In a large bowl, toss the arugula or mixed greens with a drizzle of olive oil and season with salt and pepper.
- To assemble the salad, place the dressed greens on a serving platter. Top with grilled peaches, torn burrata, and toasted walnuts.
- Drizzle the honey balsamic reduction over the top and garnish with fresh basil leaves. Serve immediately.
Notes
- Feel free to substitute peaches with nectarines or plums for a different flavor.
- You can make the honey balsamic reduction in advance and store it in the refrigerator for up to a week.
