This Grilled Peach Burrata Salad is a delicious blend of sweet grilled peaches, creamy burrata cheese, and a rich honey balsamic dressing, perfect for summer gatherings.


Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 8 ounces burrata cheese
  • 4 cups arugula or mixed greens
  • 1/4 cup walnuts, toasted
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the peach halves with olive oil and season with salt and pepper.
  3. Place the peaches cut-side down on the grill and grill for about 4-5 minutes, until grill marks appear and they are slightly softened. Remove from the grill and let cool.
  4. In a small saucepan, combine honey and balsamic vinegar. Bring to a simmer over medium heat and cook for 5 minutes, until slightly thickened. Remove from heat and let cool.
  5. In a large bowl, toss the arugula or mixed greens with a drizzle of olive oil and season with salt and pepper.
  6. To assemble the salad, place the dressed greens on a serving platter. Top with grilled peaches, torn burrata, and toasted walnuts.
  7. Drizzle the honey balsamic reduction over the top and garnish with fresh basil leaves. Serve immediately.
