- 1 pound halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Preheat the grill to medium-high heat.
- In a mixing bowl, combine olive oil, balsamic vinegar, oregano, salt, and pepper.
- Add the halloumi cubes, bell peppers, zucchini, red onion, and cherry tomatoes to the bowl and toss until everything is evenly coated with the marinade.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread the marinated halloumi and vegetables onto the skewers, alternating between cheese and veggies.
- Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the cheese is golden and the vegetables are tender.
- Remove from the grill and serve warm.
Notes
- You can add any vegetables of your choice to these skewers, such as mushrooms, asparagus, or eggplant.
- For extra flavor, sprinkle with fresh herbs like basil or parsley before serving.
