Description

Ingredients

  • 4 cod fillets (6 oz each)
  • 1 pint cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1/2 cup Greek yogurt
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 15 minutes.
  3. Mix yogurt, dill, lemon juice, garlic, salt, and pepper to make the sauce.
  4. Brush cod fillets with remaining olive oil, season with salt and pepper.
  5. Grill cod for 4-5 minutes per side, until opaque.
  6. Serve cod topped with roasted tomatoes and dill sauce.
