Delicious and healthy stuffed green peppers filled with a savory mixture of ground meat, rice, and spices.

- 4 large green bell peppers, tops removed and seeds discarded
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can (15 ounces) diced tomatoes, drained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
- Add ground beef or turkey to the skillet, cooking until browned. Drain excess fat if necessary.
- Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Mix well and cook for another 5 minutes.
- Remove the skillet from the heat and stir in half of the shredded cheese.
- Fill each green pepper with the meat and rice mixture, packing it in slightly.
- Place the stuffed peppers upright in a baking dish. Pour a little water into the bottom of the dish to help steam the peppers.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle the remaining cheese on top of each pepper, and bake uncovered for an additional 10-15 minutes, until cheese is melted and bubbly.
- Let the peppers cool for a few minutes before serving.
Notes
- You can substitute ground meat with black beans or lentils for a vegetarian option.
- Feel free to add other vegetables like corn or zucchini to the filling for added nutrition.
- These stuffed peppers can be made ahead of time and frozen before baking.
