Description
A flavorful Greek-inspired meatball bowl served with fresh tzatziki sauce.
Ingredients

- 500g ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried mint
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1/4 cup breadcrumbs
- 1 cucumber, grated
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 200°C (400°F).
- Mix ground beef, onion, garlic, oregano, mint, cumin, salt, pepper, egg, and breadcrumbs in a bowl.
- Shape mixture into meatballs and place on a baking sheet.
- Bake for 20 minutes or until cooked through.
- Combine grated cucumber, Greek yogurt, lemon juice, olive oil, and salt to make tzatziki.
- Assemble bowls with rice or quinoa, meatballs, tomatoes, red onion, and parsley.
- Drizzle with tzatziki sauce before serving.
Notes
- You can substitute ground lamb for beef.
- Let tzatziki chill for 30 minutes for better flavor.
- Meatballs can be made ahead and refrigerated.
