Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried mint
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1 cucumber, grated
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Mix ground beef, onion, garlic, oregano, mint, cumin, salt, pepper, egg, and breadcrumbs in a bowl.
  3. Shape mixture into meatballs and place on a baking sheet.
  4. Bake for 20 minutes or until cooked through.
  5. Combine grated cucumber, Greek yogurt, lemon juice, olive oil, and salt to make tzatziki.
  6. Assemble bowls with rice or quinoa, meatballs, tomatoes, red onion, and parsley.
  7. Drizzle with tzatziki sauce before serving.

Notes

  • You can substitute ground lamb for beef.
  • Let tzatziki chill for 30 minutes for better flavor.
  • Meatballs can be made ahead and refrigerated.
