Ingredients

- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 1 tbsp olive oil
- 1 cup orzo
- 2 cups chicken broth
- 1 lemon, zested and juiced
- 1 tbsp chopped fresh parsley
Instructions
- Mix ground chicken, breadcrumbs, egg, garlic, oregano, salt, pepper, and feta in a bowl.
- Form into small meatballs.
- Heat olive oil in a pan over medium heat.
- Cook meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
- In a separate pot, cook orzo in chicken broth according to package directions.
- Stir in lemon zest, lemon juice, and parsley.
- Serve meatballs over lemon orzo.
